5 Ways to Use Leftover Ham by Dara
If I had to choose between a fancy meal of ham with all the fixin’s and a leftover ham sandwich, the sandwich would win every single time. In fact, there’s a good choice the ham wouldn’t even make it into the sandwich, as I have a tendency to just cut pieces of ham off the bone and eat them straight. Tell me I’m not the only one!
Embarrassing snacking habits aside, having leftover ham in the house means that we have dinner options for days. While there are some obvious things you can make with ham—split pea soup, scalloped potatoes and ham sandwiches come to mind—I wanted to share some of my favorite leftover ham ideas that veer away from these classic recipes.
Panini-ize it
Sure, you could make a regular ham sandwich with cheddar cheese and mustard. But why not take things up a level? Spread some Dijon mustard on two slices of crusty bread, then add ham, cheese (Brie would be my choice), and apple slices. Cook in a panini press until the cheese is melted and the bread is golden brown. Tuck some fresh arugula inside of the sandwich before eating. (A Cuban-Inspired Sandwich would also be a great option.)
Serve it for brunch
Whenever I have leftover sausage or ham, or extra veggies in the fridge, I make a crustless quiche or baked egg casserole. Breakfast for dinner reigns supreme in my house, and this can also be served alongside a green salad for dinner. Scroll down and I’ll walk you through my recipe for Ham & Broccoli Crustless Quiche!
Pasta Bake
Baked pasta is fantastic way to feed a crowd. Cook some penne pasta until it’s almost al dente (about 2 minutes less than usual), then toss the pasta with some ricotta cheese and chopped ham. Spread a layer of tomato sauce into the bottom of a 9- by 13-inch baking dish, then layer the pasta mixture with additional tomato sauce, mozzarella and Parmesan cheeses, and fresh basil. Bake in a 350ºF oven until the cheese is bubbling, about 50 minutes.
Go with Crepes
Have you ever tried baked crepes? Mix up a savory crepe batter (no sugar) and cook a stack of the thin pancakes. Sauté together a mixture of savory ingredients, such as onions, garlic, mushrooms and ham, and stir in some mascarpone cheese. Fill the crepes with the savory mixture, roll them up and place in a baking dish. Top with grated Parmesan cheese, then bake in a 350ºF oven until the crepes are warmed through, 10 to 15 minutes.
Soup It Up
You can’t have a list of leftover ham ideas without including soup! While the obvious choice is a classic split pea soup, try branching out to a creamy ham and potato chowder, a tomato- and broth-based ham and bean soup, or a healthy slow cooker version that’s packed with ham, barley and vegetables. Now for the crustless quiche recipe! Start by chopping broccoli into small florets. At the same time, bring a large saucepan of water to a boil.
Add the broccoli to the boiling and water and cook for 1 minute. Drain in a colander and immediately rinse with cold water (or plunge into a bowl of ice water) to stop the broccoli from cooking further.
Whisk together some eggs, egg whites (I like to lighten things up when I can), water, cottage cheese, thyme, salt and pepper.
Pour the egg mixture into a pie dish coated with cooking spray. Sprinkle the broccoli, some chopped ham and feta cheese over the egg.
Bake until the egg is set, then let the quiche cool for 5 minutes before cutting into wedges.
That right there makes a healthy and delicious meal. If you have any other favorite recipe ideas for leftover ham, I’d love to hear them!

BARELY THERE WAVE
Okay, common problem: your hair isn’t wavy but it isn’t straight either. If you airdry it’s just not cute– yah, looks effortless, but not in this right way. If you wave it all, it takes forever. So you just put it in a FUN BUN every day. WE KNOW YOU, GIRL. And we feel you. Here are several that I find TRULY help if you struggle with this hair type…
ONE. You need that SPECIAL TOWEL or an old t-shirt. They honestly help so much in encouraging wave and reducing frizz.
TWO. Learn how to plop. What? Yes, plop. Here’s my FAVORITE VIDEO for teaching people this method… You can do it with an old t-shirt which minimizes frizz or you can use one of the hair towels mentioned above. Leave the t-shirt or towel on for as long as you can. I usually suggest getting ready, doing makeup, or even sleeping overnight. Some people need 30 min, some people need 2 hours.
THREE. 2 simple products. You have to find the right product and know when to put it on. My clients and I both always seem to have the best luck with this routine: apply THIS MOUSSE only at the root when the hair is wet. Did you hear me? Only at the root when the hair is wet. That’s important AF. Then plop. And finally, once your hair is dry, waved up and out of the towel, scrunch in some of THIS WAVE SPRAY for added hold and to encourage wave all over. Continue scrunching until that dries (this is something you can do in the car on the way to work or even at your desk)!
FOUR. The right cut. It’s essential to have layers if you want to encourage your waves to come out and play! Without layers, hair gets heavy. You’re never going to get as much wave from a long blunt cut as you are from a cut with texture and movement. Tell your stylist you’re thinking about wearing your hair more air-dried and wavy and let them decide what type of layers you’ll need.
FIVE. The ol’ diffuser. Get that thing out. If you plop your hair and notice there’s still a little dampness at the root, lean over and diffuse so you don’t break up the waves!
SIX. Don’t brush out of the shower. Every time you run a brush or comb through out of the shower, you’re breaking up the potential wave and dragging the pattern down which will straighten it. Comb it out in the shower when conditioning and then not again! Why do you think it looks so good when you come out of the water at the pool or the beach?
BTW: I think the biggest issue people have when dealing with “barely there wave” is following instructions meant for wavy hair. Your hair isn’t wavy. It’s almost wavy. So you have to do things a little differently. You can’t add weight to all the hair (meaning product) before it dries or it’s going to pull the wave down. Have you ever noticed that your hair gets most wave when you sleep on it wet with nothing in it or when you get out of the pool or ocean and don’t put anything in it? You’re not weighing that potential wave down. Let it do it’s thing and THEN add the product!

Three Christmas Favorites by Ree
Hello, friends! Well, it’s been a mammoth fall (and winter!) so far. While I’ve done my share of cooking, I haven’t been photographing and sharing recipes because of football, volleyball, Mercantile, filming, and other things that have defined the past three months of my life. Once we get past Christmas, my world will open up a bit and I’m really looking forward to spending the rest of the holiday season cooking, photographing, and getting sticking stuff all over my camera. Just like the good ol’ days!
Meantime, I wanted to share three of my very, very favorite Christmastime goodies. If you haven’t made these…ya gotta!
Prune Cake. Forget the word “Prune.” Just make this and you’ll understand the magic!
Chex Party Mix. I know what you’re thinking. You can buy it in the bag. Or you can follow the recipe on the box. Yes, you can. Or you can try this version, which is pretty much the basic recipe with just two magical ingredients added. They will change your life.
Caramel Apple Sweet Rolls. A variation of the cinnamon rolls I make every year, these have caramel apples inside and a caramel frosting. They are heaven.
I hope you’re having a beautiful holiday with your family and friends!
I love ya,
Pioneer Woman
