Mini Turtle Cheesecakes by The Pioneer Woman

I love cheesecake, but sometimes I can’t be bothered to make a big, honking full-sized one. I don’t know what the mental block is, but if I have the idea “Hey! I think I’ll make a cheesecake!” I immediately get really tired and want to get back in bed. I think it’s partly to do with the fact that a full-sized cheesecake is a living, breathing thing, and while I can usually avoid winding up with a big crack down the middle, sometimes a cheesecake does what it wants to do. In addition, a full-sized cheesecake takes so long to chill properly, and by the time you can actually cut a slice and enjoy it, you have now aged 27 years.

As I said, I just want to get back in bed.

So mini cheesecakes are where I live! They’re simpler, provide more immediate gratification (relatively speaking) and you can freeze them and just pull out what you need when you need it.

And they don’t make me tired. Sold!

 
First, make the chocolate cookie crust. Add chocolate graham crackers to a food processor. (Or you can use Oreos!)

 
 
Add a little sugar…

 
 
Then pulse the crumbs…

 
 
Until they’re really fine.

 
 
Keep pulsing while you drizzle in melted butter.

 
 
This makes the crumbs nice and moist.

Oh, and buttery!

 
 
Line a couple of muffin pans with paper cups, then add crumbs to each one. You need about 2 tablespoons of crumbs in each cup.

 
 
Use your fangers or the bottom of a 1/4 cup measure to pack them tightly in the cups.

 
 
Now just set these aside; no need to bake ’em!

 
 
Next up: Make the cream cheese filling! That’s softened cream cheese…

 
 
Sugar…

 
 
And eggs.

 
 
Oh! And vanilla!

 
 
Beat this until it’s totally smooth…

 
 
Then (this is where things really go off the rails) drizzle in some jarred salted caramel. (If you can’t find salted caramel sauce, you can just use regular caramel sauce with a little salt added.)

 
 
Mix this in, scraping the sides of the bowl and trying really hard not to dive in and eat this with a spoon. Just remember everything your mama taught you about patience being a virtue!

 
 
Divide the batter equally among the muffin cups.

 
 
It should work out to be roughtly 3 tablespoons of batter per cup. Give or take a gallon.

Now put these into a preheated 350 degree oven and bake them for about 15 to 17 minutes, until they’re set.

 
 
Let them cool for a bit, then pop the pans into the fridge to chill completely, about 2 hours or so. (Or you can make these and keep them in the fridge overnight if you have a life to go live!)

 
 
When the cheesecakes are chilled and you’re ready to finish them, make a luscious and easy ganache: Add chopped semisweet chocolate to a bowl…

 
 
Then pour over hot heavy cream…

 
 
And let it sit for a couple of minutes.

 
 
Once the chocolate has started to soften, start whisking it slowly…

 
 
And keep going until the mixture is smooth and perfect. This is a slightly thick ganache; you can add a little more cream if you want it to be a little thinner.

 
 
Add a little ganache to the tops of the chilled cheesecakes and spread it to even it out.

 
 
Lightly press a pecan half in the center…

 
 
Then sprinkle mini chocolate chips all over.

 
 
The straw that broke the camel’s back is a little more salted caramel sauce on top! Don’t try to be neat about it; if it gets on the paper cup, great. Life is beautifully messy.

 
 
You can freeze these in the finished form, then just pull them out and let them thaw. Or you can chill them in the fridge and serve them later in the day.

 
 
Or…

 
 
You can just dive in right now.

As you can see, that’s exactly what I did.

6 tips de tendencias fitness 2019

Tus posturas son un básico para tu salud

Una postura correcta es la clave para retrasar el envejecimiento. Por eso, el equipo de Marta Rosado ha creado un programa llamado Reeducación Postural, compuesto por actividades como:

  • Espalda sana
  • Diabetes y ejercicio
  • Movilidad de la cadera
  • Patología de la rodilla
  • Iniciación a la fuerza

Cada una de estas clases son independientes y para un máximo de 3 personas, para que el entrenador no pierda detalle y el trabajo sea completamente efectivo y corregido en todo momento.

A tope de adrenalina

Los deportes de contacto siguen estando en la lista de tendencias para la temporada que viene. ¡Y el boxeo sigue siendo el número 1! ¿Los beneficios? Mejorar los reflejos, saber defenderse, quemar calorías, mejorar la coordinación, etc.

Estudios fitness boutique

Puedes utilizarlos como complemento al gym. Los estudios boutique no cobran cuota, sino que va por clase, y el objetivo es que te enfoques en la parte que quieres trabajar de forma extra. Las clases específicas que puedes encontrar son: abdominales, glúteo, tríceps, suelo pélvico, hipopresivos…

Que el baile no falte

Por supuesto, bailar sigue siendo la mejor opción. De esta forma harás ejercicio mientras disfrutas y te costará menos esfuerzo. Al bailar movilizas grandes grupos musculares, esto es sumamente positivo para muchas enfermedades, mejoras la fuerza, la flexibilidad y la resistencia. Además combates la obesidad por la quema de calorías, estimulas el flujo sanguíneo y el funcionamiento del sistema circulatorio.

No vamos a olvidar el papel fundamental de hacer ejercicio, tanto en embarazo como en el post parto. Que estés embarazada no es una excusa para paralizar tu vida, a menos que sea tu médico quien te impida entrenar por el motivo que sea, no dejes de mimarte en estos momentos.

La gran importancia de estirar

Por último no olvidemos los estiramientos. Tanto una buena clase de yoga, como pilates o streching, son la opción ideal para tener una espina dorsal flexible y no perder jamás el niño que llevas dentro.

Together at Last by The Pioneer Woman

The family was all together this weekend!

 
 
Both Paige and Alex were home from college and were able to stay all weekend…which meant they were able to help their dad work cattle. And see Cowboy Josh, who’s always glad to have extra help!

 
 
It was a relatively short cattle working—only about three hours—but they packed a lot into that timeframe. Go, Todd!

 
 
You know, sometimes when I’m on a remote part of the ranch and I only see open prairie with no telephone or electric lines, I can pretend for a minute that it’s 1843 or something because there’s no evidence to the contrary.

 
 
Well, on Saturday, I was able to pretend for a minute that the girls aren’t in college because everything looked and seemed the same as it did when they were still my little pookie heads.

Well, my little extremely tall pookie heads.

 
 
“This is all great, but can you hurry things up? I need to take my Saturday nap.”

Geez. Some cows are so lacking in sentiment!

 
 
As I was saying, it was so wonderful to have them all home…in the pens…sorting cattle…

 
 
And WEARING MY COAT, ALEX???? I was wondering where that went!

 
 
Alex, Todd, Paige, and Ladd were sorting off the calves, which they needed to work. Bryce, meanwhile, was still in the pasture bringing in the four that got away when they were gathering earlier.

 
 
And Caleb was home from college, too! He was on his horse roping as if he hasn’t skipped a beat.

 
 
We were only missing Missy, Tim, and Halle, who were visiting family in southern Oklahoma.

 
 
The horses were all sweaty after gathering! They had to work off their Thanksgiving feast, I guess.

I know the feeling.

 
 
We all warmed up after awhile and the coats came off!

 
 
(Now’s my chance to reclaim mine…)

You know, sometimes when I’m on a remote part of the ranch and I only see open prairie with no telephone or electric lines, I can pretend for a minute that it’s 1843 or something because there’s no evidence to the contrary.

 
 
Well, on Saturday, I was able to pretend for a minute that the girls aren’t in college because everything looked and seemed the same as it did when they were still my little pookie heads.

Well, my little extremely tall pookie heads.

 
 
“This is all great, but can you hurry things up? I need to take my Saturday nap.”

Geez. Some cows are so lacking in sentiment!

 
 
As I was saying, it was so wonderful to have them all home…in the pens…sorting cattle…

 
 
And WEARING MY COAT, ALEX???? I was wondering where that went!

 
 
Alex, Todd, Paige, and Ladd were sorting off the calves, which they needed to work. Bryce, meanwhile, was still in the pasture bringing in the four that got away when they were gathering earlier.

 
 
And Caleb was home from college, too! He was on his horse roping as if he hasn’t skipped a beat.

 
 
We were only missing Missy, Tim, and Halle, who were visiting family in southern Oklahoma.

 
 
The horses were all sweaty after gathering! They had to work off their Thanksgiving feast, I guess.

I know the feeling.

 
 
We all warmed up after awhile and the coats came off!

 
 
(Now’s my chance to reclaim mine…)
