Chorizo Breakfast Tacos by Dara

When it comes to weekend brunch, my husband and two boys would choose waffles or pancakes nine times out of ten. That is, unless some sort of sausage is being mixed into an egg dish. As an egg lover myself—and typically the one in charge of the stovetop—I am more than happy to cook up some sausage if it means that eggs will be on the menu.

Every year for my husband’s birthday and Father’s Day, the boys and I make a batch of breakfast burritos for the man of the hour, which is exactly where the love of chorizo and eggs originated. That being said, those breakfast burritos can be fairly labor intensive, so I was thrilled that my family liked these easy chorizo breakfast tacos.

 
 

Start by cooking the chorizo over medium-high heat, breaking it up with a wooden spoon as it cooks. If you are making these breakfast tacos for a weekday breakfast and want to speed up the process even more, cook the sausage the day before and store it in the refrigerator. It will warm up once it’s mixed with the eggs.

Chorizo sausage always tends to have a little extra fat. Once it’s cooked through, transfer it to a bowl lined with paper towel. The paper towel will absorb the extra grease so you don’t end up with drippy tacos. No one wants that!

 
 

Next, whisk and scramble the eggs, season with salt and pepper, then stir in the cooked chorizo sausage.

 
 

Now it’s time to assemble the tacos. Use two corn tortillas for each taco so that the tacos don’t fall apart while you’re eating them.

We like to top our breakfast tacos with pepper Jack cheese, pico de gallo and slices of avocado, but feel free to use whatever appeals to you. Minced cilantro, Cheddar cheese or queso fresco and tomatillo salsa would also be great options.

 
 

These Chorizo Breakfast Tacos are a winner: less than 10 ingredients, only 20 minutes from start to finish, and so much flavor. Dig in!

The Man Cave is Coming by The Pioneer Woman

Paige is leaving for college later this week. I’ll write more about the emotional ramifications of this development as the next few days unfold, but in the meantime, I wanted to point out that in just over three days, my house is going to metamorphose into a veritable man cave. This didn’t actually hit me until just last week. Sure, I’ve known all along that Paige would be heading to school in August 2018, and that I would miss her, and that things would once again be different in our household, and that I would cry for the following seven weeks (I’ve stocked up on super soft Kleenex.) But until last week, I hadn’t considered the fact that a house that was once inhabited, somewhat evenly, by both male and female citizens is overnight going to be a house of men…with one mom thrown in.

Not to throw out all the obvious generalizations, but I’m about to throw out all the obvious generalizations.

Makeup and hair products won’t be scattered all over the upstairs, where all the kids reside.
Dresses and skirts won’t be draped over the furniture.
The smell of Bath and Body Works won’t waft downstairs on a daily basis.
Candles likely won’t be lit in the upstairs bathroom. (Though, ahem, they probably should.)
There will be no glitter.
There will be no glue.

Okay…the upstairs will probably be neater and cleaner than it’s ever been. But right now I’m trying to stay focused on the negative, guys!

How to Make Ice Cream Cones (with Tortillas!) by Bridget

Let’s answer the question you’re probably thinking right now: Why would one want to make ice cream cones from tortillas? It all started when a friend sent me an article about making ice cream cones from slices of bread and puff pastry. I love all things ice cream and was up for the challenge.

The bread slices, the puff pastry, and a few other things I experimented with didn’t work out so well. Then it occurred to me—tortillas! They’re flat, they’re round, they’re easily accessible. They just might work. Guess what? They DO work. Every time.

 
 

The feedback I’ve gotten from these has been great. My son loves the softer texture of the tortillas and said he prefers these to a regular cone. Eating them, I had visions of crepe ice cream cones in Paris (I’ve never been there, but I’ve heard stories), so this is my Texas tortilla version. Ooh-la-y’all?

 
 

You don’t need an ice cream come press or maker, but you will need a roller for shaping. A krumkake roller is perfect. Grab the larger size version, unless you want very tiny cones. (Mine has a cone length of over 5 inches.)

 
 

You’ll start with plain 5- to 6-inch flour tortillas. Roll them out to make them even flatter. You might get another 1/2 inch or so of diameter. Brush both sides with melted unsalted butter.

 
 

Sprinkle both sides with granulated sugar. When the sugar melts in the oven, it’ll enable you to form the cone shape. Granulated sugar makes a much better “glue” than powdered.

 
 

Add some flavor to the sugar if you’d like. Cinnamon sugar is dreamy with chocolate ice cream. I’ve made a spiced version using chile-lime seasoning and sugar. This one is so good with a mango sorbet.

These bake two at a time. So, I think the cones are best for family ice cream nights, maybe not for a neighborhood block party.

 
 

Turn a rimmed cookie sheet upside-down. Place a piece of parchment paper on top. Then place the buttered and sugared tortillas on top of that.

 
 

Cover with another sheet of parchment and another cookie sheet, right-side up. Place a cast iron skillet on top of the stack if you have one. (This will just help ensure that the tortillas don’t puff up.)

 
 

Bake at 350ºF for 9 minutes. Remove from the oven and carefully wrap a hot tortilla around the mold. Roll the mold with the tortilla around it on the hot cookie sheet for about 3 seconds, most of that time with the seam down to seal. Remove the cone from the mold and place on a wire cooling rack. Repeat with the other tortilla.

 
 

While cones are still warm, turn them often and use the mold to keep the opening from flattening. Let cool completely on the wire rack. The cones won’t become crunchy but they will stiffen up as they sit, so make them a few hours before serving.

 
 

These homemade cones will likely have a hole in the bottom. Plop a few marshmallows or chocolate chips inside before filling with ice cream.

 
 

Scoop ice cream into the prepared cones and enjoy. (Have lots of napkins nearby.) Cones are best the same day they’re made.
