We all need a few delicious go-to recipes we can rely on for holidays and for hosting weekend guests—dishes that are easy to make, require very few ingredients, and are true crowd-pleasers.
This simple egg bake is one of my favorite recipes for feeding large groups at family reunions. It’s ridiculously simple to assemble, can be adjusted according to taste, and draws out the oohs and ahhhs like no other breakfast casserole.
Plus, you can double the recipe for a larger pan of egg bake!
Simply roll out a sheet of puff pastry and fit in a square baking dish. Crimp the edges to help the crust hold up against the sides of the pan.
Whisk eggs and half-and-half together until frothy.
Then stir in shredded cheese.
Pour the egg mixture into the pan and bake until the center is puffy and the edges are golden.

This egg bake recipe is also easy to customize. Start by using your favorite cheese: sharp cheddar, smoked Gouda, Muenster, Swiss. Then rummage through the fridge or pantry to find tasty add-ins.
Here I added diced roasted red peppers from a jar. However, chopped ham, bacon, cooked leftover veggies, pesto, cooked spinach, and olives are also good choices.
The sky is the limit here! Any ingredient that is already cooked can be thrown right in. Fresh herbs like scallion, basil, and thyme can also be added to boost the flavor.
My family will tell you the best thing about this easy egg bake is that it makes marvelous leftovers.
Extra pieces are great rewarmed the next day for breakfast. The taste and texture is just as good on day 3, or even day 4. We even like to wrap pieces and pop them in lunchboxes, with a side salad, for a quick delectable lunch.
