Grilled Vegetable & Andouille Salad with Spicy Ranch

Every summer potluck needs a great big salad dressed with ranch. I made this for a family cookout and everyone loved it!

Well, except my 8-year-old, but she’s a picky pants. She picked out the grilled corn and only ate that. I can’t say I blame her, though. Grilled corn on the cob is one of my favorite summer treats, and it adds a bit of sweetness to this giant salad filled with fresh, crisp greens, creamy avocado and spicy sausage.

Did I mention there are grilled onions in this as well? My husband will eat an entire grilled onion in one sitting. I would, too, if we’re being honest.

For the base of the salad I used romaine hearts, shredded carrots, and purple cabbage. I think every salad needs a sprinkling of purple, don’t you?

Next, throw the corn, andouille sausage, and onion rings on the grill.

I was visiting my parents while I was taking these photos, and the grates on their grill are wider apart than mine. Consequently, I lost several onion rings to the propane flames. I should have used a grill skillet! Seriously, have you used one? It makes cooking vegetables so much easier on the grill. I’ll never skewer anything ever again.

Now it’s all about chopping: stripping the corn off the cob, dicing the onions, and chopping the hot sausage.

Add them to the salad bowl, and don’t forget the avocados! I love the creamy texture they add, and if your andouille happens to be extra spicy, it’ll help cool things off.

Speaking of cool, I love the way hot sauce looks when you mix it with ranch dressing. I bought some locally-made ranch dressing for this, but you can make some homemade if you like. I love using my Paleo Ranch Seasoning to make my own dairy-free ranch dressing.

At this point you can customize the spiciness of your dressing. Just remember that the flavors will mellow when you mix it with the salad, so go nuts with that hot sauce! I added some lime juice, too, and it really brightened it up.

This salad would go with pretty much anything you throw on the grill—burgers, ribs, steak, BBQ chicken, or even more grilled vegetables. (I really love grilled vegetables, much to the chagrin of my kids.)
