Last week I was walking through the seasonal aisle at the grocery store. You know, the one lined with all the candy-coated Easter eggs and chocolate bunnies right now?

As I looked through the pre-packaged treats, it dawned on me that I was not feeling tempted by a single one of them. (Ok, maybe I felt just a little bit tempted by the Reese’s Eggs.)

Could it be? Have I finally matured past the point of being lured by brightly-colored store-bought candy?

No.

 
 

Actually, at the time, I was simply thinking they would all taste better if they were homemade.

Seriously, have you ever prepared homemade chocolate peanut butter candy, or homemade chocolate truffles? They are ridiculously addictive. And so much more delicious than the long-shelf-life variety.

 
 

In fact, I believe pretty much everything tastes better when we take the time to make it ourselves. So this year, I thought I would make my Easter basket treats instead of buying them.

These simple Easter Chocolate Coconut Truffle Spoons are essentially chocolate-coated truffles made on disposable spoons for easy everything: dipping, decorating, wrapping, and tasting.

 
 

The truffles sitting on spoons can be decorated with all sorts if spring sprinkles and candy, so they look like little Easter eggs. You can poke them down in Easter baskets, or present them in cute bouquets!

 
 

The candy itself seems to last longer than a traditional chocolate truffle, because of the handle. Since the chocolate coating isn’t melting on your hands, you’ve got more time to savor it.

 
 

I’ve made chocolate truffle spoons with many different flavored fillings, but today I thought I’d share a chocolate-marshmallow-coconut variety because it combines the flavors of some of my favorite childhood Easter treats. Instead of a smooth filling, the shredded coconut provides a devilish chunky interior that is completely irresistible.

 
 

These Easter Chocolate Coconut Truffle Spoons can be made up to a week before serving, and are fun treats for parties. I took this batch to a neighborhood gathering and they were a huge hit with the kids and adults alike.

In fact, I think I saw two or three older neighbors going back for seconds and thirds.

 
 

The truffle spoons are so simple to assemble; you can use this recipe as a kids craft and snack at spring events this year. Let the little ones dip them in almond bark or colored candy melts, and sprinkle them with spring colored sprinkles.
