Picture a hot summer day. There are cicadas humming in the trees, and you’re sitting on a porch swing rocking back and forth under a ceiling fan. What’s missing?
You might think the scene needs an ice-cold glass of iced tea, and you wouldn’t be wrong. But I have a better idea: How about an ice-cold Arnold Palmer popsicle?
Don’t get me wrong, I love iced tea. But after a while, the ice melts, the tea dilutes, and it eventually gets warm. A popsicle does better at staying cold and refreshing. Unless you drop it on the ground, that is. Then you cry and watch it melt.
If have no idea what an Arnold Palmer drink is, I need to ask: “What? How can this be?” Then I’d need to take a minute to calm down before describing this ultimate refreshing summer drink. It’s really simple, just equal parts lemonade and iced tea. It’s called an Arnold Palmer because it was the favorite drink of that famed golfer.
We’re still battling some serious summer heat, so naturally I had to make Arnold Palmer popsicles. Everything is better on a stick anyway. I didn’t make it the traditional way because I wanted a flavor-packed popsicle. So instead of making a simple combination of lemonade and tea, I decided to make lemon sugar to sweeten the tea, and then add a bit of lemon juice. These popsicles are wonderfully refreshing and a little on the tart side.
Make as many of these as you can! You are going to need them to get you through the heat. And raise a popsicle to Mr. Palmer for creating the ultimate summer drink.
