This Friday is Cinco de Mayo, one of our favorite holidays because it provides a convenient excuse to stuff ourselves with Mexican food. Even though the holiday is probably enjoyed more in the United States than in most of Mexico, it’s fun to celebrate the scrumptious food we love from Mexico. Almost everyone loves Mexican food, and we all have our favorite dishes. Here are a few recipes to get your party planning started!

Enchilada Chicken Tostadas. Make a nice big batch of pressure cooker shredded chicken, and these tostadas will only 20 minutes to throw together! If you plan things right, you’ll even have enough shredded chicken for the chilaquiles coming up shortly.
