Marinated Chicken Salad

I feel like serving salad for supper is a great way to get your meals back on track for the week. It’s so easy to fall into the trap of convenience meals that are a bit wanting in the nutrition department. (What?! Ketchup isn’t a vegetable?!) With a salad, you can pack a bunch of nourishing foods all into one bowl.

When I make a salad for a meal, I like to include plenty of protein and good fats. Otherwise, you will be hungry again in half an hour and go roaming the cupboards, seeking what you may devour (in my case that would probably be chocolate).

This salad has protein from the chicken, eggs, and Parmesan cheese. It gets its fat from the dressing, the egg yolks, and the kalamata olives.

 
 
Marinated Chicken Salad

For the best flavors, this salad does require a bit of prep. Take the chicken out of the freezer the day before you’re going to make it. You could also do some meal prepping by washing and chopping your veggies, boiling the eggs, and mixing up the marinade the night before. The morning of, get your chicken in the marinade. Then all that’s left to do at suppertime is cook the chicken and assemble the salad!

The downfall of most salads is the dressing. It’s hard to find an actually healthy store-bought dressing. They’re super convenient, I know. But mixing up a dressing at home is a cinch.

I decided to simplify things for this weeknight meal by using the same ingredients for the dressing in the chicken marinade, with just one little addition to give you a creamy dressing. That way you don’t have to mix up two completely separate sauces!

 
 
Marinated Chicken Salad

You should definitely use this recipe as a jumping-off point. If there are certain greens or other veggies that you prefer, use them instead! You could also throw on some homemade croutons (or serve with crusty garlic bread) or candied nuts. Let your imagination run wild!
