I love a good popsicle! For me, popsicles with always trigger memories of my childhood. When I was a little girl visiting my grandmother in Puerto Rico, there was a lady down the street who sold limber (popsicles) for a quarter. They were homemade and frozen in a little plastic cup. The trick to eating them was to pop them from the cup and turn them upside down in the cup.
When we would return stateside, our go-to popsicles were the long bright-colored popsicles—I liked the blue ones mostly because they would turn my tongue blue. Popsicles have come a long way since. There are even gourmet popsicle shops!
If you do a quick search for popsicle recipes, you will see every kind of popsicle you can imagine. But sometimes it’s nice to keep it simple and classic. That is where this simple creamy vanilla bean popsicle comes into play.
This popsicle if full of vanilla flavor and comforting creaminess. The trick to both is the vanilla bean and full-fat creamy milk. If you can’t find vanilla bean, you can purchase a bottle of vanilla paste and use 1 teaspoon. It is ok to use vanilla extract in a pinch, but I suggest you use 1 tablespoon of extract to get the same intense vanilla flavor.
