As Valentine’s Day approaches, you might find yourself wondering what to make your sweetheart for dinner February 14th.
It’s always tempting to find an “ultra gourmet” recipe with 50+ ingredients and 20+ steps, in hopes of impressing your significant other with your cooking prowess.
For some reason, we think that if our sweetie sees just how much trouble we went to, they will know how very loved they are.
However, I find a simple yet perfected meal is not only just as impressive, it will keep you calm and in the right frame of mind for romance Valentine’s Day.
After all, who feels romantic when they are stressed out!?
A simple steak dinner, using a great cut of beef with a few simple but elegant sides, is the perfect meal to satisfy your sugarloaf. Serve it with a nice bottle of wine, and you’ve got a meal fit for a king.
Although mashed or baked potatoes are the most traditional sides for steak, it’s fun to dress things up in the potato department for holidays.
Crispy Hasselback Potatoes with Jalapeno Cilantro Sauce is a baked potato variation that offers a lot of wow factor. They are crispy on the outside, soft in the middle, easy to pull apart, and are doused in a rich zesty sauce.
Who wouldn’t love these potatoes served with a big juicy steak?
Simply slice each potato into thin rounds, taking care not to cut all the way through the bottom. You want the potatoes to hold together.
Then drizzle them with oil, sprinkle with salt and pepper, and bake!
The oil works its way in between the slices, creating a crispy home-fry quality on top. Yet the bottom and center of the potatoes stay tender.
Hasselback potatoes are great on their own. However, our Jalapeno Cilantro Sauce really takes them up a notch.
While the potatoes are baking, puree cilantro, a little low fat mayo, water, lemon juice, garlic, and jalapeno together in a food processor.
Once the potatoes are out of the oven, drizzle the tops with this creamy herbaceous sauce!
