Elevating Pancake Mix

Whoever invented pancakes was a genius. Think about it: it’s a cake “baked” in a pan, ready in a matter of minutes. It’s cake for breakfast, and who doesn’t want cake for breakfast!

Cake for breakfast is easier than ever using pancake mix, but sometimes you want more than just plain cake—especially when you’re planning breakfast in bed for a special someone. There are three easy ways to jazz up your pancake mix: add-ins, mix-ins, or sprinkle-ons.

For add-ins, try to go with sturdy ingredients that can stand up to mixing, like dried fruit, crispy bacon, chocolate chips, nuts, and whole grains. 

Mix-ins are ingredients what you, well, mix into the batter—like mashed bananas, peanut butter, grated apple, grated carrot, pumpkin puree, or sweet potato puree. This gives you flavored pancakes. 

Finally, we have what I call sprinkle-ons. If you want to add fruit and keep it intact, the best way to do this is to sprinkle it on after (or sometimes, before) you pour the batter on the griddle. Sliced bananas or whole fruit like berries or peaches make great sprinkle-ons.

Peanut Butter Chocolate Chip Pancakes

This is perfect for peanut butter and chocolate lovers. The pan-fried bananas are optional but I highly recommend them. They really make these pancakes extra special!

Raspberry and White Chocolate Pancakes

Raspberries and white chocolate are such a classic pair. Here, the white chocolate chips are mixed into the batter. Then I add the raspberries to the pan before ladling on the batter.

Apple Pie Pancakes

Who says you can’t have apple pie for breakfast? After all, we’re already having cake! With the addition of grated apple, cinnamon, and oats, these pancakes could almost pass for apple pie and streusel.

With a bag of pancake mix and a collection of add-ins, mix-ins, sprinkle-ons and toppings, the possible combinations are practically limitless.
