10 Healthy Recipes to Start the New Year! by PW Food & Friends

Good day, everyone! Welcome to 2018! Did you sleep in today? Or did you get up early and start working off all that holiday indulging? (We hear ya.)

Most folks try to eat healthier the first weeks of a new year, which is understandable considering all the feasting we’ve been doing since November. There are only so many roasts, casseroles, whole birds, cookies, pies, cake, and cocktails one can have! If you’re looking for ideas on eating healthier without depriving yourself of delicious, comforting food, look no further. We’re sharing 10 healthy recipes to get you started!

How to Make Baked Oatmeal

Baked Oatmeal. Dara shows us the basic components that go into a hearty dish of baked oatmeal, then gives us 5 different variations to try. Try them all, then make your own!

Magnificent Granola. Fact: Homemade granola just tastes so much better than store-bought. It’s super easy and costs less to make, much fresher, and you get to put whatever you want in it. Make extra, then transform some of it into granola bars!

Healthy 7-Layer Dip. Just because it’s game day doesn’t mean you can’t have as much fun as the person next to you slurping up the last of the queso. This layered dip has all the flavor, creaminess and richness you’re looking for—without the guilt. Feel free to go to town with this!

Chicken & Vegetable Rice Noodle Soup. Ah. There’s nothing like a warm, comforting bowl of chicken soup to chase away the winter cold. This recipe uses rice noodles, and you can add almost any vegetable or protein typically used in a stir-fry. Perfect for cleaning out the fridge, too!

How to Make Vegetable Broth. While we’re on the subject of soups, here’s a great way to use up any veggies and veggie scraps you may have. Store broth in your freezer and you’re already halfway to a nice pot of soup any time you need to throw together a last-minute meal.

Marinated Chicken Salad

Marinated Chicken Salad. If the rest of the day ends up getting away from you, get yourself back on track with this salad for dinner. It has lots of protein and good fats to keep you satisfied, and Erica makes it easier by using the same ingredients for the dressing in the chicken marinade (with just one addition to give you a creamy dressing).

Baked Apple Chips. Feed your snack monster with these simple and healthy chips. And maybe, when you need a bit of decadence, dip it in some homemade caramel sauce or drizzle it with a bit of caramelized white chocolate ganache. Go ahead, we won’t tell.

Fruit & Nut Energy Bites. Speaking of snacks, have you made these delicious little nuggets yet? If you haven’t, you’re missing out. Big time. They’ll quickly become a favorite and a staple in your home, and depending on what you add, they also tick so many new diet and lifestyle boxes. Trying to go paleo, Whole30, raw, vegan, gluten-free, or dairy-free? These bites have you covered!

Salad for Breakfast!

Salad for Breakfast! Yes indeed, you can have salad for breakfast. Natalie also shares a recipe for a simple berry yogurt dressing to bring everything together. (Throw a fried egg in there and watch us do a happy dance!)

Veggie-Stuffed Fried Rice. Erica’s fried rice is loaded with veggies, and as a bonus, it’s a one-pan meal. It’s another one of those dishes that can help you clean out your fridge and use up extra produce. Everyone wins!

And there you have it, just some of the many great recipes we have from our wonderful contributors. What we love about these is that they’re scrumptious first, and incidentally healthy. Everyone in the family will enjoy them!
